Seafood Chowder

Ingredients
  • Fish Pie Mix
  • 1 Large Onion
  • Pack of Smoked Bacon Rashers
  • 600ml Fish Stock
  • 1tbsp Plain Flour
  • 225g Potatoes (quartered)
  • 300ml Milk
  • 4tbsp Cream
  • Fresh Parsley
  • 1tbsp Vegetable oil
  • Cayenne Pepper (or smoked paprika)
  • Add the chopped onion and bacon to a medium heat, large pot for about 10mins until the onion is soft and bacon cooked
  • Stir in flour and cook for 2mins
  • Pour in the fish stock and bring to a gentle simmer then add the potatoes and cook for about 15mins
  • Add the cayenne pepper and seasoning then stir in the milk
  • Add the fish mix and simmer for about 5mins then add the cream and simmer for a few more mins stirring regularly
All cooked in 1 large pot. Make sure potatoes are fully cooked before serving.
Serve hot in bowls, garnished with some fresh parsley, salt and pepper with crusty, buttered bread on the side.
If you can’t find a packet of fish mix, buy some regular fish such as salmon, cod, smoked coli and chop to size. The tastier the fish the better. You can also add shellfish but that’s not my thing.
