Wash and chop the spinach roughly then boil in a large pot until reduced, drain thoroughly
Add the feta, sour cream and sunflower seeds to the pot and mix to a mush
In another pot or pan, fry the onions until soft then add the tomatoes, garlic, basil, salt & pepper
Assemble the lasagne in an oven proof dish as follows; 1/3 tomato mix, lasagne sheets, 1/3 spinach mix, lasagne sheets, then repeat, finishing with lasagne sheets
Add grated cheese to the top with some salt & pepper and transfer to oven
Cooking
Cook in a pre heated oven at 200C for about 30mins.

Serve with your side of choice, ie – chips, salad, coleslaw, etc..
