Spinach & Feta Lasagne

Ingredients
  • Lasagne Sheets
  • 1 Packet Feta
  • 2 Large Bags of Spinach
  • 250g Sour Cream
  • Handful of Sunflower Seeds
  • 1 Can Chopped Tomatoes
  • 3 Medium Onions (finely chopped)
  • 3 Garlic Cloves (finely chopped)
  • Fresh Basil
  • Cheddar Cheddar & Morzarella
  • Salt & Pepper
  • Wash and chop the spinach roughly then boil in a large pot until reduced, drain thoroughly
  • Add the feta, sour cream and sunflower seeds to the pot and mix to a mush
  • In another pot or pan, fry the onions until soft then add the tomatoes, garlic, basil, salt & pepper
  • Assemble the lasagne in an oven proof dish as follows; 1/3 tomato mix, lasagne sheets, 1/3 spinach mix, lasagne sheets, then repeat, finishing with lasagne sheets
  • Add grated cheese to the top with some salt & pepper and transfer to oven
Cook in a pre heated oven at 200C for about 30mins.
Serve with your side of choice, ie – chips, salad, coleslaw, etc..
This is a fully vegetarian (not vegan) dish.
