Slow Cooker Beef Satay

Ingredients
  • 500g Beef/Steak Strips
  • 2tbsp Crunchy Peanut Butter
  • 1tbsp Honey
  • 2 Garlic Cloves (finely chopped)
  • 1 Thumb Fresh Ginger (finely chopped)
  • 3tbsp Soy
  • 2tsp Curry Powder
  • 200ml Beef Stock
  • 1tbsp Cornflour (mixed with 1tbsp cold milk)
  • 1 Red Pepper (chopped)
  • 1 Yellow Pepper (chopped)
  • 2 Carrots (chopped)
  • 1 Onion (finely sliced)
  • 100ml Coconut Milk
  • Spring Onions
  • Brown the beef strips on a hot pan for 5 mins or until browned (optional)
  • Add everything to the slow cooker except the coconut milk (add 30mins before end)
Cook on high for 4hrs and low for 4hrs, adding the coconut milk 30mins before the end.
Serve with rice and some chopped spring onions or fresh coriander for garnish.
You can add whatever veg you like really, mushrooms too maybe?
