Lemon & Cardamom Cookies

Ingredients
240g Plain Flour
65g Caster Sugar
125g Unsalted Butter
6 Cardamom Pods (Seeds removed and finely chopped or crushed)
Zest of 1 Lemon
1tbsp Lemon Juice
Method
Rub the lemon zest, cardamom and sugar in a mixing bowl
Add softened butter and beat until light and fluffy
Stir in lemon juice
Add flour and pinch of salt and bring together to form a dough, handling as little as possible
Roll out the dough to about 5mm thick and cut out circles to about 6cm
Place on greased baking sheets and sprinkle with sugar
Cooking
Preheat oven to 150C (Fan) and bake the cookies for 18-22mins.
Serving
Allow to cool on a wire rack and have with tea or coffee!
Notes
The original recipe uses gluten free flour but I found the cookies way too brittle.
