Lemon & Cardamom Cookies

Ingredients
  • 240g Plain Flour
  • 65g Caster Sugar
  • 125g Unsalted Butter
  • 6 Cardamom Pods (Seeds removed and finely chopped or crushed)
  • Zest of 1 Lemon
  • 1tbsp Lemon Juice
  • Rub the lemon zest, cardamom and sugar in a mixing bowl
  • Add softened butter and beat until light and fluffy
  • Stir in lemon juice
  • Add flour and pinch of salt and bring together to form a dough, handling as little as possible
  • Roll out the dough to about 5mm thick and cut out circles to about 6cm
  • Place on greased baking sheets and sprinkle with sugar
Preheat oven to 150C (Fan) and bake the cookies for 18-22mins.
Allow to cool on a wire rack and have with tea or coffee!
The original recipe uses gluten free flour but I found the cookies way too brittle.
