Start with cold, salted water and parboil the chips for only a couple of minutes after reaching boil point
Drain off the water and add the paprika, salt, pepper and some olive oil to the pot, add the lid and give a good shake to coat
Place chips on a a well oiled baking tray and bake in a preheated oven at 220C (fan) for about 25mins or until brown and crispy, turning a couple of times
Season with more salt & pepper before serving
Cooking
Ideally cook in a fan oven that has fan + grill function at the same time to crisp better.
Serving
Serve as a side with dips to main dinners such as burgers, fish, etc..
Notes
You can leave the peels on for more rustic chips or use the same process for carrot, sweet potato chips etc..
