Cream of Mushroom Soup

Ingredients
250g Mushrooms
1 Large Onion (finely chopped)
2 Garlic Clove (finely chopped
28g Butter
20g Plain Flour
500ml Chicken Stock
240ml Cream
2tsp Salt
2tsp Pepper
2tsp Nutmeg
Method
Cut the mushrooms into slices and rinse
Melt the butter in a large pot then add in the onions, garlic, and mushrooms and cook until onions are soft
Stir in the flour
Add in the chicken broth and stir frequently until slightly thickened
Stir in cream with additional flour, nutmeg and seasonings until smooth and thick
Cooking
Cook all in a single pot.
Serving
Serve in bowls with salt, pepper and parsley on top and some crusty, buttered bread.
Notes
Vary the type of mushrooms or mix several types together.
