Cream of Mushroom Soup

Ingredients
  • 250g Mushrooms
  • 1 Large Onion (finely chopped)
  • 2 Garlic Clove (finely chopped
  • 28g Butter
  • 20g Plain Flour
  • 500ml Chicken Stock
  • 240ml Cream
  • 2tsp Salt
  • 2tsp Pepper
  • 2tsp Nutmeg
  • Cut the mushrooms into slices and rinse
  • Melt the butter in a large pot then add in the onions, garlic, and mushrooms and cook until onions are soft
  • Stir in the flour
  • Add in the chicken broth and stir frequently until slightly thickened
  • Stir in cream with additional flour, nutmeg and seasonings until smooth and thick
Cook all in a single pot.
Serve in bowls with salt, pepper and parsley on top and some crusty, buttered bread.
Vary the type of mushrooms or mix several types together.
