Caesar Salad

Dressing
2tbsp Lemon juice
1/4tsp Worcestershire sauce
1 Garlic clove (finely chopped)
1/2tsp Black pepper
3/4tsp Dijon mustard
3/4cup Mayonnaise
1/2tsp Olive oil
1/4cup parmesan
Main Ingredients
2 Chicken breasts
Bacon lardons
Head of iceberg lettuce (sliced small)
Croutons
Method
Dressing
Add lemon juice, mustard, worcestershire, garlic and pepper to a small bowl and whisk until blended.
Stir in mayo until smooth
Add oil slowly while continuously whisking
Stir in parmesan and refrigerate until needed
Main Ingredients
Chop chicken breasts small and season
Cook lardons first then add chicken
Cooking
Cook the chicken and lardons in a pan or wok until nicely browned.
Serving
Mix all ingredients together in a large bowl and serve in small bowls.
Notes
Lardons can be swapped for cut bacon. You could also add feta, nuts, grapes, melon pieces etc to make it more interesting!
