Toast the sliced bread then butter each piece and spread a small amount of mustard on half of them
Place the cheese slices on half the bread slices
Place tomato slices on the cheese layer
Place the bacon on the tomato layer
Top with a fried egg and remaining slices of toast
Cut sambos in half and serve
Cooking
Grill and pan required, medium to high heat.
Serving
Serve with a cup of tea or coffee and some fresh fruit on the side.
Notes
This is my go to breakfast 2 or 3 times a week, probably not every day! You can use slimming world or gluten free bread and low fat cheese for a healthier option.
