Breakfast Sambos

Ingredients
  • Sliced Brown Bread
  • Sliced Cheddar Cheese
  • 2 Eggs
  • Smoked Bacon
  • 1 Tomato
  • Mustard
  • Grill the bacon and fry the egg on a pan
  • Toast the sliced bread then butter each piece and spread a small amount of mustard on half of them
  • Place the cheese slices on half the bread slices
  • Place tomato slices on the cheese layer
  • Place the bacon on the tomato layer
  • Top with a fried egg and remaining slices of toast
  • Cut sambos in half and serve
Grill and pan required, medium to high heat.
Serve with a cup of tea or coffee and some fresh fruit on the side.
This is my go to breakfast 2 or 3 times a week, probably not every day! You can use slimming world or gluten free bread and low fat cheese for a healthier option.
