Use an electric mixer to beat the butter, sugar, eggs, banana and vanilla essence in a bowl
Stir the flour into the mixture
Add the chopped walnuts but keep about 2tbsp for the top
Transfer to a lightly greased and lined tin and scatter the remaining walnuts and some brown sugar on top
Bake in a preheated oven at 170°C (fan) for about 40 to 50 mins
Allow to rest in tin for about 10 minutes then turn onto a wire tray to cool
Cooking
After about 40mins in the oven press a knife into the center of the bread and if it’s clean when pulled out the bread is done.
Serving
Serve wile still warm with some real butter and maybe some jam.
Notes
Bananas should be very ripe and brown but not gone off. Try substitute nuts with pecans, almonds, hazelnuts or even chocolate chips. When cold, wrap in greaseproof paper and tinfoil to preserve.
